SIERRA CANTABRIA TASTING NOTES: Salmon color, clean and bright. Aroma of red berries, light aniseed notes and notes of fresh fruit, strawberry, blackberry, raspberry, pomegranate. In the mouth we find it fresh, fragrant, well balanced, wraps fruit and acidity with the memories of pomegranate, watermelon, etc. In the aftertaste, it develops intensely, persistently, leaving us a lively memory.
SIERRA CANTABRIA PAIRING: Recommended dishes: Salads, hors d’oeuvres, vegetable stew, some fish and white meats (chicken, turkey) without excessive flavoring.
COUPAGE: Tempranillo, Garnacha y Viura.
SIERRA CANTABRIA AGING: Maceration of all varieties for 4 days. Controlled fermentation at 16 ºC with autochthonous yeast selected from our own vineyards.
CONSUME: Conservation: constant temperatures and below 16º C .; humidity close to 80% and dark environment. Consumption: Service temperature: 6-8 ºC.
VINEYARDS: Vineyards: own located in San Vicente de la Sonsierra and Labastida. Average yield: 30 Hls./ Ha. Manual harvest with selection of the clusters in the vineyard and at the entrance to the winery using a selection ribbon.
