SCALA DEI CARTOIXA TASTING NOTES: View of very high layer, dark, dense deep cherry color, violet nuances. Nose: Intense and persistent aromas of ripe black fruits, plums and a floral touch of violets intermingle with evident mineral notes contributed by the licorella that give it a typical characteristic of the Priorat. The rest in the aging brings spicy aromas such as vanilla, pepper and toasted notes. The palate is a powerful, unctuous, smooth wine with intense ripe tannins, imposing body, long and persistent over time
SCALA DEI CARTOIXA AGING: This wine is made with the historical varieties Garnacha, Cariñena, Syrah and Cabernet Sauvignon. Garnacha and Cariñena come from old vineyards (around 60 years old) planted in licorella terraces between 500 and 800 meters high. The harvest is manual. The vineyards that give the best grapes for the production of this wine are fermented separately. Once the alcoholic fermentation was finished, the wine was transferred to the barrel where the malolactic fermentation took place. The aging in barrels selected mainly from French oak, 80% new and the rest one year old. Then he did a year-old bottle aging. This wine will evolve favorably during the next 7-12 years stored in adequate conditions. Aging: 14 months in barrel.
